Gluten and Ricos Nacho Cheese Cups

I just got the following email back from the lovely lady at Ricos about the Ricos Nacho Cheese Cups (like pudding cups - but w/nacho cheese sauce).

"We just received the gluten test. The smallest laboratory test that can be tested for gluten is 5ppm which is parts per million. No gluten was detected for this.

Just so you know the proposed FDA guideline for gluten free is as follows:
* An ingredient that is derived from a prohibited grain and that has been processed to remove gluten, if the use of that ingredient results in the presence of 20 parts per million (ppm) or more gluten in the food or
* 20 ppm or more gluten

So this cheese is considered gluten free.

We appreciate your business and if you have any other questions please contact me."

As with anything not specifically gluten free you will just need to make a decision deciding on sensitivity. It does add another choice for many.

I used the Nacho cheese at my twins birthday party a few weeks ago, and it was a huge hit! Thanks so much for the hint. The whole party was gf--3 dozen cupcakes that I made and had a friend decorate, and the nachos.

Do you mind sharing what recipe or package of cake mix you used? I have yet to try the cake mix I purchased and would love to know what worked for you.

I tried 2 different ones--the Cherrybrook farms Chocolate cake mix, which turned out a little more like muffins, but still tasted good, and the Bob's Red Mill Chocolate Cake Mix, which had a better textier and tasted more like real cake. My daughter has one friend who is allergic to eggs, so the she could eat the Cherrybrook farms mix, as it had no eggs or dairy in it.

We ended up eating all of the cupcakes, down to the ones I didn't frost--I don't think we are nearly as picky anymore! But we did prefer the Bob's mix.

Dear Ladies, thank you for sharing the letter from RiCos cheese company. Love Nachos, and I'm super happy I can enjoy them again.
