Pumpkin Pie!!!
Grace LOVES pumpkin pie - LOVES it! We all do. Troy's late Mother made a great pie and I make her recipe every year for Thanksgiving and Christmas. Several weeks ago Grace said she was going to miss pumpkin pie for Thanksgiving - I suggested we try to make it with out a crust - like a custard. I am sorry we waited too long.

What we are thankful for
A year ago this week Grace got her diagnosis of Celiac. What a year we have had! We went from being freaked out and "What do we do now??" to handling it - pretty well.

Gluten Free Eggs??
This just goes to show you that you can find gluten in the strangest places. We went to iHop last night for a fundraiser - knowing full well that what Grace could (or would) eat would be limited. She ended up having a plate full of bacon and hot chocolate - the dinner of champions!

To scope or not to scope - That is the question.
Disclaimer - This is simply me "thinking out loud." It also bounces around so stay with me. I am not advocating one position or another - however I am advocating speaking to your doctor and asking questions while deciding the best thing to do for you and/or your child.

Gluten Free Birthday Cake!
Sam's 8th birthday was last Monday and he (very maturely) said he wanted a gluten free cake. I tried the Betty Crocker Gluten Free Chocolate cake mix - it was successful.

Peanut Butter Cookies
I made these for Grace right after she was diagnosed - she hated them because they tasted like peanut butter cookies (Duh!) I had to make some cookies for a meeting tomorrow night and looked for something I had the ingredients for on hand - that is when I remembered the cookies!

My favorite recipe site
I LOVE allrecipes.com! It is my favorite go to site for any or all recipes. Got a bucket full of squash - put squash in the search bar and you will have a ton of recipes pop up. Got squash and cheese and crackers - put the ingredients in "ingredient search" and it will pull up several choices.
