Udi's Gluten Free Double Chocolate Muffins!


Udi's has done it again - Double Chocolate Muffins! Chocolate cake-like goodness in a single serving size with lovely chocolate chunks inside.


These are Gracie's favorite muffins - she loves them for breakfast or for birthday parties! We used to get GF cupcakes for her to take to parties but she now prefers the chocolate muffins - with or without icing. They are a generous size and perfect for putting a little icing with sprinkles on top if you want a little fancy - but also really good just plain.

We find these muffins (like the others) are best when put in the microwave for 1 minute at 50% power (from frozen - adjust if thawed.) The Udi's site says it is also great served with berries for dessert!

I have to admit I am not a big fan of gluten free baked goods but these are REALLY good! Gluten free or not - they are just a darn good muffin.



Chess pie - My oh my!

So... I go to make pumpkin pie on Christmas morning only to discover I didn't have pumpkin! What to do, what to do? I searched on Allrecipes.com and came up with Chess Pie! Num, num, num.


Chess pie is a super sweet, eggy custard pie - it is a hit with the old people since it has been around forever! I think it needs to make a comeback.

I came upon this recipe that was super simple and had ingredients I had on hand.

So how is pie gluten free you ask? Well - the pie crust isn't but the custard is. I made the filling per the recipe - the only change I made was I didn't add the corn meal to Gracie's dessert since I didn't have GF corn meal on hand. I poured it into a custard dish and put it in a water bath and baked until a pick came out clean.

This was such a simple, old fashioned pie that everyone loved. We topped it with Cool Whip and Cool Whip makes EVERYTHING more awesome!

I also do Pumpkin Pie Custard which Gracie LOVES! I would assume you could do any of the custard pies as a crustless custard by cooking in a water bath. So - break out your favorite pie recipes and experiment for yourself - or try the Chess Pie! You won't regret it.

Gluten Free Bisquick!


I heard the urban legend that Gluten Free Bisquick was coming - but it appears it is here! I have yet to try it but I would love to hear from anyone who has.


I just went on the Bisquick site and saw they have a "Product Locator" - I see they have a store by my parents who have it.

It looks like the main flour in it is rice flour - it does say the recipes need to be altered because of how rice flour cooks differently. I am looking forward to trying it!

So - has anyone tried it yet?

Update:

It is AWESOME! The pancakes are "normal!" Our whole family eats them.

I add a little more milk since the batter is a little stiff but other than that I follow the directions.

The bad news - it is about $4 + for a VERY small package. It makes about two recipes of pancakes. I have only tried it for pancakes - I would like to try the biscuits.

I can recommend the GF Bisquick. It is really good, available (it is at my local WalMart) and EASY!
